• 80-100 lbs. of steaks - 1.5" thick - Rib steaks, New York, Sirloin, Skirt and Cube
• 100-110 lbs. of roasts - 3-4 lbs. each - Chuck, rump, shoulder, and brisket (approx. 9 lbs)
• 190-200 lbs. of ground beef - 1 lb. packages - 85/15 fat content
• 5-6 lbs. of soup bones and/or shanks
