• 12-15 lbs. of roasts - 3-4 lbs. each - Chuck, rump, sirloin tip, shoulder
• 20-25 lbs. of ground beef - 1 lb. packages - 85/15 fat content
• 5-6 lbs. of soup bones and/or shanks
